I must admit that I have never been a meatloaf fan until I tried experimenting on my own. For one thing I do not eat eggs. A lot of meatloaf recipes require eggs to keep the loaf together or bread/bread crumbs. I really did not enjoy biting into a slice of Meat Loaf and tasting a piece of soggy bread..... Yuck :(! So in my pursuit of meatloaf perfection, I came up with the below recipe. It is very unique yet delicious, and before you say "No way!", after reading the ingredients, I say, “Don’t knock it until you try it!”

First You will need the below:


  • 1 pound of ground beef
  • 1 chopped bell pepper (remove seeds and stem)
  • 1/3 chopped onion
  • 1 cup chopped lettuce
  • 2 tablespoons curry powder
  • 1 tablespoon cracked blackpepper
  • 1 tablespoon season salt
  • 1/3 cup of your favorite barbecue sauce

1. Chop 1/3rd of a peeled and washed onion, and 1 bellpepper. (Make sure bellpepper seeds and stem are removed)

3. Next take 1 pound of ground beef, and divide into 4 quarters. This will help the ingredients to be mixed evenly.

8. Now that all the ingredients are together, you can mix the loaf. I usually do this by hand, but some people use a spoon and mixing bowl, or a small bread pan to shape the loaf.

10. Take a fork and poke holes in the loaf. This will allow the grease to escape.

11. Put loaf in a glass casserole dish and bake on 350 for 45 minutes to an hour, until the inside is completely cooked. I use a round casserole dish so I can pour the excess grease off of the loaf during the cooking process.

The covered casserole dish allows the moisture to stay in the meatloaf. I drain the grease once during the cooking process (Make sure you wear oven mitts if you attempt to do this or have someone help you so you do not get burned), and again after the loaf is done. You can also buy a meatloaf cooking pan that separates the grease for you (see below).

12. Lastly cover with a layer of your favorite babecue sauce. Whip up some homemade mashed potatoes and sweet peas to make a delicious family meal. This loaf can feed up to 5 comfortably. Enjoy :)!
