Chewy Gooey Cookie Heaven

One of my favorite bonding routines with my little angels are baking cookies. The best thing about it is everyone does their part to make a delicious product. My families favorite cookie is a fresh oatmeal cinnamon raisin cookie with walnuts. It's like biting into a chewy piece of Heaven. The best thing about making oatmeal raisins are, they do not have to have a perfect appearance. They are bumpy, lumpy and just plain good!

To start, you will need:

INGREDIENTS

1/3 teaspoon baking soda

2 teaspoons ground cinnamon

2 cups rolled oats

1/2 cup raisins

1/3 cup walnuts

1/3 cup dried cranberries (optional) for extra texture and flavor

1 teaspoon vanilla extract

6 tablespoons softened butter

1/2 cup brown sugar

1/2 cup white sugar

1 egg

2 cup all-purpose flour

1/4 teaspoon salt

Instructions:

1. In a large bowl add 1 cup of flour, egg, rolled oats, butter, vanilla extract, brown sugar, white sugar, baking soda, salt, and cinnamon.

2. Mix with a large spoon.

3. Add walnuts, raisins, and (optional dried cranberries/craisins).

4. Stir in remaining cup of flour slowly, do not over mix dough.

5. Refrigerate covered for 45 mins.

6. Spoon dough into balls (should make 24) onto 2 baking pans (12 per pan) with greased cookie sheets.

7. Preheat oven to 350F.

8. Bake 10 to 12 minutes.Cool. Plate. Serve warm or cooled. Yum :)
